
Wild Oats Bakery & Cafe, the popular downtown bakery, is expanding for the second time in two years and has tentative plans to open a satellite bakery at Brunswick Landing, the former Navy base.
“We’re most likely going to open out there,” cafe owner Becky Shepherd said Wednesday about a Pegasus Street building now owned by Tom Wright of the non-profit organization Seeds of Indepen- dence. The approximately 2,500-square-foot building, next to what will soon be the Seeds of Independence offices, would be the first food provider to open at Brunswick Landing.
“We’re talking about what it’s going to look like,” said Shepherd, who owns the business with her husband, David. “We already do a fair amount of business on the (former) base, delivering food out there. We do a lot with the community college and the businesses. We see (Brunswick Landing) as something that’s developing into a great opportunity for us.”
Wild Oats, which Shepherd said employs 45 people fulltime, won the 2012 Maine Merchant Association’s Retailer of the Year award.
Shepherd is in the midst of expanding the existing Wild Oats Bakery & Cafe at the Tontine Mall on Maine Street. Two years after increasing the seating and retail area on the ground floor of Wild Oats, she is expanding the basement kitchen. The overall size will increase from 6,300 square feet to 7,500 square feet, and should be finished this summer. The soonest she would expand to Brunswick Landing would be this fall.
Shepherd said she hopes a new facility would have some autonomy and include production instead of just retail. She’d also like to work with more interns, she said.
“It’s is a risk, because (Brunswick Landing) is so young,” she said. “Yes, we are planning on opening out there, but right now we’re focusing on expanding our kitchen here (at Tontine Mall).”
