
Lauded Pastry Chef Georgia Macon, who had been with Twelve restaurant since 2022, will be leaving Prentice Hospitality Group at the end of October.
“It’s been a great few years that I’m really proud of, but it was the right time,” Macon said.
She also produces baked goods for other Prentice properties, including Evo Kitchen + Bar and The Good Table, and helped develop the pastry program for their latest venue, Portuguese restaurant Douro.
Macon got her start studying at Le Cordon Bleu in Paris, working at restaurants around her native St. Louis, and then at San Francisco’s esteemed Tartine Bakery. In 2023, she was named a Rising Star pastry chef by the StarChefs publication, and her work at Twelve earned plaudits in regional and national press including Boston magazine, The New York Times and The Wall Street Journal.
“I’m all set with my dad now for the rest of my life now,” Macon joked about the raves, “so that’s a huge win.”
Macon also oversees Prentice’s new food trailer, Not A Bakery, which just wrapped up its first season. Not A Bakery still offers its specialty pastries at several Greater Portland stores, including Bard Coffee, Barber Bros. in South Portland, Jordan’s Farm in Cape Elizabeth and Hank’s Restaurant in Scarborough, and will be doing pop-ups throughout the fall, winter and spring.
Fans of Macon’s work can stay on top of her offerings through her Instagram account, @peachcoloredglasses. Her last day with Prentice will be Oct. 31. Macon hinted that she’ll have a new concept to announce in a few months, “after a very long nap and some time with my family.”
