
Gill’s Bar, launched by a team that includes the owners of the Wayside Tavern, is set to open on Spring Street in Portland this Thursday.
Gill’s is located at 133 Spring St., the former location of Bao Bao Dumpling House. The 45-seat venue takes its name from Gill’s Handy Store, which occupied the space in the mid-20th century.
Wayside co-owner Siobhán Sindoni described Gill’s as a “typical neighborhood bar.” The cocktail-driven beverage program will also feature local and European beers and a value-minded selection of about 10 wines by the glass.
Sindoni and her husband Michael teamed up with former Lenora chef and co-founder Rian Wyllie to open Gill’s. Wyllie’s food menu includes items like patty melts, Italian sandwiches, stuffed clams and salads.
Gill’s Bar will be open Sundays, Mondays and Thursdays from 4-10 p.m., and Fridays and Saturdays from 4-11 p.m.
