SCARBOROUGH – Sheila Claire Darwin Humphrey, a resident of Piper Shores, Scarborough, died on July 23, 2025, after a long and full life.

Sheila was born in Lewiston, Idaho, July 14, 1928. Her parents were Ruth Jacobs Darwin and Gil Darwin. Sheila attended Lewiston High School and the University of Idaho. She enrolled in the Nutrition Program in the School of Home Economics and pledged Kappa Alpha Theta. She graduated as the top senior student in Home Economics and was awarded the Hagen Silver Bowl. She was selected as the cover girl for the January 1950 issue of the national journal, “What’s New in Nutrition.”

After graduating from the University of Idaho in June 1950, Sheila was accepted as a Dietary Intern at Massachusetts General Hospital in Boston, Mass. Upon finishing the internship she married Arthur Earl Humphrey on June 13,1951. She then joined the St. Lukes Hospital dietary service in New York while Arthur completed his graduate studies at Columbia. Upon Arthur’s graduation, they moved to Philadelphia where they lived for 27 years while Arthur served as a professor at the University of Pennsylvania. While raising two daughters, Sheila returned to graduate school to obtain a MS degree in Nutrition followed by an 11-year appointment as an instructor in nutrition at Drexel University in Philadelphia, Pa.

Sheila and Arthur later lived in Bethlehem, Pa. for 12 years while Arthur served as Provost at Lehigh University. Later, the couple lived in State College, Pa. until Arthur’s retirement five years later.

Sheila and Arthur were “snowbirds” for awhile, living in Tucson, Ariz. and Portland, Maine. They particularly enjoyed being members of a square dance club in Arizona. In 2003, they moved to Piper Shores in Scarborough.

Most of all, Sheila enjoyed her years traveling internationally with her husband, Arthur. The entire family lived in Tokyo, Japan and Sydney, Australia during Arthur’s professorship. In Tokyo, Sheila taught a course in English at Waseda University. In Sydney, Sheila assisted in city hospitals for a research program on causes of obesity in adult males.

Sheila is survived by her husband, Arthur; and two daughters and sons-in-law, Andrea Houston and Dan Rinks, and Allyson Humphrey and Jim Charette. She is also survived by her grandson, Sam Dyson and his wife, Elizabeth.
