
I was introduced to the book, “China Study” written by T. Colin Campbell, PhD and Thomas M. Campbell II in Dr. Ruben Bell’s class.
One of the most fortunate findings from the mountain of nutritional research is that good food and good health is simple. The recommendations coming from the book are: eat a whole food, plant-based diet, while minimizing the consumption of refined foods added salt and added fats. (I personally met Dr. Collins, spoke with him, heard his lecture, saw his movie and have an autografted book.)
The “China Study” written by a world-renowned nutritional scholar gives life-saving nutritional information for health-seekers in America. There is a great deal of information about our country, the world and the production of the foods that we eat in his publication.
I have condensed the findings only to mention about plant-based diet and our health.
What is most important in life? Without health life is not so much fun. What do we need to do to optimize our health? Medical breakthroughs have been made in the field of nutrition. Research has shown that a simple change in diet has stopped and even reversed major diseases. The first discoveries in how nutrition affects health were made in the field of heart disease.
As the horrific toll of modern diseases became more common doctors feel a responsibility to solve them. Over the past thirty years, doctors and scientist have discovered new techniques that produced highly positive results. The idea that nutrition promoted good health is not new.
As early as 400 BC, Hippocrates and medical people knew about the link before the Western diet that is driving the current obesity and health-care dilemmas. Dr.Caldwell Esselstop Jr. M.D., an Olympian gold medalist, winner of a bronze star in Vietnam, and one of the top-billing surgeons in the history of the highly respected Cleveland Clinic, this man is the real deal.
He wanted to learn how patients might be able to prevent, arrest or even reverse their medical problems. During his study Esselstop became convinced that what we eat plays a critical role in our health. He said, “What better way to treat heart disease than to simply treat its cause?” He began to treat very sick patients with nothing but plant-based foods.
Within months, the patient began to improve and after a few years the results were outstanding. Dr. T. Collin Campbell summed up the efforts of many doctors who were giants in the field of medicine. Dr. Campbell, a professor of nutritional biochemistry at Cornell University found that these doctors learned about the power of a plant-based diet.
Dr. Campbell did not rest on the findings of animal studies and the massive human study in China. He sought out the findings of other researchers and clinicians. These findings show that heart disease, diabetes and obesity can be reversed and influenced by a healthy plant-based diet.
The key point to gain is that you can control how your body works. Your body moves in rhythm with the food you eat. I believe in moderation.
