2 cloves garlic

3 red chilies

3 tablespoons lime juice

1 tablespoon fish sauce

21/2 tablespoons palm sugar

2 cups shredded green papaya

1 cup shredded carrots

6 cherry tomatoes, halved

3 tablespoons roasted peanuts

Mash the garlic and red chilies lightly with a mortar and pestle. Add the lime juice, fish sauce and palm sugar. Toss the papaya and carrot with the dressing.

Finally, add the tomatoes and peanuts, and mix all the ingredients together.
