The historic Jameson Tavern, which abruptly closed in February, could reopen by Independence Day under new management and a new business plan.
Tom Hincks, who has previously owned restaurants in Portland, has taken over the space with plans to open by later this summer.
Hincks told WMTW-TV that the restaurant will look much as it did under the previous owner, but the menu will feature more locally grown produce, meats and seafood.
“It’s been a dream to come to Freeport. I’ve been in Portland, wanted to get out of Portland, try something new, and this just happened to be here.
“Three days ago we worked out the lease. Everything’s a go, and now we’re just going to give it a little TLC and go with what made Jameson Tavern what it was,” Hincks said.
The building dates back to 1779 when it first opened as an inn. Some have claimed it as the site of the signing of documents declaring Maine’s independence from Massachusetts.
Hincks said he hopes to be ready to open around July 4.
